This recipe is one of my all-time favorites and I usually pull it out when I’m looking for a quick and easy meal OR entertaining guests on the fly {talk about a 2 for 1 combo!} I was first introduced to this recipe by my Norwegian roommate in college who taught me how to make this classic salmon dish in papillote. Buttery salmon is topped with fresh herbs, lemon slices and colorful veggies then wrapped in foil and baked to juicy perfection! The options are truly endless with this dish and I have created a gazillion versions when scrambling last minute to entertain a dinner party. By the way, this dish is quite a show stopper and your guests will think you’re a Michelin Star Chef! {well…. not quite but it’s still pretty bad-ass!}

SALMON SURPRISE 1 salmon filet 1 small sheet of of aluminum foil 1 tbs butter 1/2 tsp minced garlic 1 tsp chopped green onions 1/4 cup thinly sliced red bell peppers 1/4 cup thinly sliced yellow bell peppers 2 lemon slices 1/2 cup sugar snap peas 1/2 cup broccoli florets Pinch of salt and pepper

Chopped parsley for garnish (optional)

Preheat over to 400 degrees F. 1. Place the salmon on the sheet of aluminum foil. 2. Top with butter, garlic, green onions, veggies and lemon slices. 3. Sprinkle with salt and pepper. 4. Fold the foil over the fish to create a little package. 5. Place on a baking sheet and bake in oven for about 15 to 20 minutes until fish is just cooked through.

6. Sprinkle with chopped parsley before serving.
