Pumpkin Spice Pancakes – Mod Max Glam

It’s FALL….. which means Pumpkin Spice  E V E R Y T H I N G!!! And what’s better on a weekend morning than pancakes? Well….. pumpkin spice pancakes with dark chocolate chunks, of course! My weekday routine can be quite brutal with 12-16 hour days which means my meals are quick, lean and on the go BUT I like to savor my weekend mornings and enjoy a luxurious breakfast treat. This pancake recipe is super simple with a store bought mix and chunks of my favorite dark chocolate – Exellence from Lindt.

Here’s my recipe for a delicious pancake treat to welcome the weekend…. or week!


1 cup Pumpkin Spice Pancake mix {I used Trader Joe’s} 1 egg 2 tbs melted butter 1/2 cup plus 2 tbs water 2 – 3 squares Dark Chocolate Lindt – Exellence {cut into little chunks}

Pure Grade A Maple Syrup for serving.

In a medium mixing bowl, use a whisk to combine the egg, melted butter then add the water. Next add 1 cup pancake mix and dark chocolate chinks. Use a wooden spoon to combine until all the ingredients have just come together. Do not over mix or your pancakes won’t be light and fluffy. In a heated skillet, add 1 tsp butter until melted, then use a 1/4 cup measure to drop the batter onto skillet. After 1-2 minutes, tiny bubbles will appear on the surface which means it’s time to gently flip. Cook pancakes on the other side for about 1.5 minutes then set aside on a plate and place in oven to keep warm while you keep making the rest of pancakes. Enjoy! 🙂
