Seriously…..there’s absolutely nothing better than a buttery, luxurious lobster roll and an ice cold artisan beer to satisfy my insatiable appetite on a hot summery day! It’s hearty yet still pretty light and when paired with scrumptious, salty Cape Cod Potato chips, I’ve pretty much died on gone to foodie heaven! Lobster Rolls are much easier to make than you think and I would suggest you give these a try before summer comes to an end {and by that I mean ASAP!} Here’s my recipe for the perfect New England Lobster Roll:


{Serves 4}

4 Spiny Lobster tails 2 tbsp sour cream 1 tbsp Mayo 2 tbs chopped chives 1 stalk of celery, chopped {only use the tender, inner celery stalk} Salt and freshly ground black pepper to taste 4 Potato Rolls 4 tbs melted butter Potato Chips {I prefer Cape Cod} Cole Slaw {optional}

Your favorite summer brew!

Bring a large pot of water to a boil. Add salt to season the water then add the lobster tails. Cook for 10 minutes then drain in a colander. Wait about 10-15 minutes for the lobsters to cool down so you can remove the shell.

Once you’ve removed your lobster meat, chop into bite size pieces and place in a bowl. Add the sour cream, mayo, chives, celery, salt and pepper then stir to combine. {I would suggest making this lobster salad at least 1 hour in advance to allow the flavors to develop!}

Split you potato buns and slather with melted butter then lightly toast on a griddle or skillet over medium heat. Pile your potato rolls high with the lobster salad and enjoy with your favorite ice cold beer and salty chips! YUM
