Have you eaten an Earth Bowl lately? No? What-The-What?! Well… here’s one you should definitely try this week and it’s easier than you think. This bowl has all the makings of a balanced meal that will leave you feeling deliciously healthy!

This Greek Earth Bowl has 5 main components and starts with a must-have grocery store staple; the rotisserie chicken! Every self respecting girl on the go has one in her fridge. {And if by chance there isn’t one, don’t worry, you’re still cool!} To a bowl, add a few slices of chicken breast, some cooked quinoa, sauteed spinach, olives with feta, a dollop of hummus and dinner will be on the table in less than 30 minutes. I adore a meal like this on busy weekdays….. the ones where you get home dying of hunger and open the fridge to find a bounty of satisfyingly delicious food. Hallelujah!

Ingredients:
1 Rotisserie Chicken
1 cup cooked quinoa
10 oz sautéed spinach with onions and garlic
Greek olives with feta
Hummus
