Summer Picnic Style

When summer rolls around, my Sundays are in full picnic mode and I love planning an escape to the park to enjoy the sunshine, great friends and even better…… picnic foods! Now….. I’m not one for toting around a huge, heavy picnic basket with fried chicken, potato salad, cutlery etc. That stuff {although incredibly classic and delicious} is way too high maintenance for me and I end up having to lug a big ol’ basket back to the car afterwards. My kind of summer picnic is easy, breezy and fuss free with all the yummy food groups you need to satisfy that summer feeling….. and they ALL fit into a cute picnic tote!

My time tested, must-have, go-to picnic food is the sandwich and not just any old sandwich….. it’s a pesto, goat cheese and peppered salami sandwich with fresh, organic baby spinach. It sounds like a mouthful and it sure is! This decadent, gourmet sandwich tastes like summer and reminds me of sunny picnics on the beach with my college roomies back in Santa Barbara.

Here’s my must-have list for a chic picnic this summer:

1. Cozy blanket – I’m partial to classic black and white stripes like this IKEA throw.

2. Bubbly – A picnic is a party after all so you need a little champs to get that festive feelin’ going! {I know you know what I’m saying ;) }

3. Fresh fruit and berries – Nothing says summer like a cool slice of watermelon and a bowl of berries. To make eating even easier, I like to skewer my berries on toothpicks.

4. Chocolate Cupcakes – I don’t know about you….. but chocolate in any form is a huge requirement at any meal. In my world, it’s a basic food group!

5. A good magazine – I love to layout under the sun with a big hat and peruse the pages of a juicy tabloid or chic decor magazine.

6. Pesto, Goat Cheese, Peppered Salami Sandwich – Trust me, you’ll be craving this sandwich all summer long! Simply slather both sides of a baguette with pesto, top with creamy goat cheese, peppered salami and baby spinach {arugula would also be awesome} It’s soooooo damn good ya’ll!!!
