This just might be the world’s easiest and most deliciously delightful cheese course everrrrrr! Brie en croute is a classic french recipe where a wheel of Brie is topped with apricot jam, toasted walnuts then wrapped in buttery puff pastry and baked to golden perfection……….. Yes! This is the perfect appetizer! When baked, the puff pastry becomes light and flaky and as you cut into it, the brie and apricot jam oozes out as this rich, creamy confection. An absolute crowd pleaser and showstopper in one! Here’s a word to the wise, I recommend making two of these bad boys for a party because it will disappear in a matter of minutes. BRIE EN CROUTE 1 sheet frozen puff pastry (thawed) 1 wheel of Brie 1/4 cup apricot jam 2 tbs toasted walnuts, chopped 1 egg, lightly beaten with 1 tbs of water (egg wash) Fresh fruit and assorted crackers for serving Preheat oven to 375 degrees. On a parchment paper lined sheet tray, place the puff pastry then add the Brie over it. Top the Brie with the apricot jam and chopped toasted almonds. Gather up the sides of the pastry dough over the brie to form a pouch and gently squeeze the ends to seal the dough. Lightly brush this little package with egg wash and bake for about 20 minutes until golden brown. Serve with assorted crackers and fresh fruit!
