Please allow me to preface this post by saying that I’m not a huge fan of donuts…. mainly because they are deep fried and the actual dough has very little flavor which is then over-compensated by a thick sugary glaze.
Baked donuts however are the complete opposite and I have to admit that they can be quite addictive. Since there’s absolutely nothing health conscious about the traditional donut, I wanted to attempt making it a bit less evil and I have to say that I am quite impressed! These are delectable cake donuts made with almond paste, topped with a sweet yogurt honey vanilla glaze and fresh raspberries. The combination of fresh fruit with a baked donut is simply divine…….. and I don’t feel so guilty reaching for a second!

Ingredients: 1 1/2 cups all purpose flour 3/4 cup almond paste 1/2 tsp baking powder 1/8 tsp baking soda 4 tbs unsalted butter (room temperature) 1/4 cup sugar 1/4 tsp salt 1 egg 1 tsp almond extract 1 tsp pure vanilla extract 1/2 cup milk
